Holding Function of Commercial Rice Steamers: Keeping Rice Texture After Cooking
Many canteen managers know this problem: the rice finishes steaming early, but service starts late. By the time it reaches the table, the grains are dry, hard, and taste stale. The problem is not the cooking — it is the holding. How you use the holding function on a rice steamer decides whether your diners get soft, fluffy rice or dry, hard grains.
1. Why Does Rice Turn Dry and Hard?
Two main reasons ruin steamed rice over time. First, starch retrogradation: as rice cools from high temperature, the starch recrystallizes and the grains harden. Second, moisture loss: if the holding temperature is too high or the cabinet is not sealed, steam escapes and the grains dry out.
So the key to holding rice is simple: keep the temperature in a range that slows retrogradation, and keep the moisture locked in. Do both, and the rice stays acceptable for one to two hours.

Door opening also matters. Every time the door opens, steam escapes and the temperature fluctuates — the rice gets "shocked." During peak service, collect rice in fewer, quicker trips instead of opening the door repeatedly.

If you switch the steamer off completely during holding, the humidity inside drops and the rice surface dries quickly. The better approach is a low-power heating state that keeps some steam humidity in the cabinet.
When buying, look for a steamer with an independent holding-and-humidifying function. Models that rely only on residual cabinet heat hold rice much worse.
